Slow Cooker Marry Me Tofu Pasta (Vegan)

This Slow Cooker Marry Me Tofu Slow is the cozy, creamy, plant-based comfort food you need! Just toss everything into the slow cooker and let it do the work while you get on with your day!

Slow Cooker Marry Me Tofu Pasta (Vegan)

Ingredients-

  • 1 block (400g) extra-firm tofu, cubed

  • 2 tbsp olive oil (or oil from the sundried tomatoes)

  • 2 tbsp tomato paste

  • 2 cloves garlic, minced

  • 2 tbsp Italian seasoning

  • 1 tbsp dried oregano

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp salt

  • ½ cup sun-dried tomatoes, chopped

  • 1/2 cup zucchini, chopped

  • 1 can (400ml) coconut milk

  • 1 cup vegetable stock

  • 1 cups baby spinach (to be added later)

  • 1 cup vegan mozzarella shreds (to be adder later)


Directions-

  1. Add oil, cubed tofu, tomato paste, garlic, Italian seasoning, oregano, onion powder, paprika, smoked paprika, garlic powder, salt, sun-dried tomatoes, zucchini, coconut milk, and vegetable stock to the slow cooker. Stir to combine.

  2. Cover and cook on HIGH for 2–2 ½ hours or LOW for 4–5 hours, until tofu is tender and sauce is creamy.

  3. About 15 minutes before serving, stir in spinach and vegan mozzarella. Cover until spinach wilts and cheese melts.

  4. Serve warm over pasta, rice, or with crusty bread. Enjoy!
