For the Tofu:
• 1 block extra-firm tofu, torn into chunks
• 1 tbsp cornstarch
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp paprika
• 1 tbsp oil
• Pinch of salt & pepper
For the Veggies:
• 2 cups broccoli, chopped
• 2 carrots, sliced
• 1 bell pepper, diced
For the Teriyaki Sauce:
• 1 tbsp cornstarch + 2 tbsp water (make separately)
• ⅓ cup soy sauce (low sodium)
• ½ cup water
• 3 tbsp maple syrup
• 1 garlic clove, minced
• 1 tsp ground ginger
Directions
Press and dry your tofu and tear it into bite-sized chunks. In a medium bowl, toss the tofu chunks with cornstarch, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
Heat oil in a large pan over medium-high heat. Add the tofu and cook for 8–10 minutes, turning occasionally, until golden and crispy on the edges. Remove and set aside.
In the same pan, sauté onion, garlic, and ginger. Add broccoli, carrots, and bell pepper. Saute for 8–10 minutes, stirring occasionally, until tender.
While the veggies cook, in a small bowl whisk together the cornstarch and water to make your slurry. Set aside.
Start to make the Teriyaki Sauce. In a small saucepan, add soy sauce, water, maple syrup, garlic, and ginger. Bring to a boil. Stir in the slurry, then reduce to a simmer and cook for about 5 minutes, until thickened and glossy.
Add the tofu back into the pan and coat with the teriyaki sauce. Stir until everything is coated in that sticky sauce.
