Taco Tofu Rice Dump & Bake

This Taco Tofu & Rice Dump & Bake is one of those effortless dinners that somehow tastes like you worked way harder than you did. Cozy taco-seasoned rice, perfectly spiced tofu, and melty cheese all bake together in one dish for a protein-packed weeknight win.

INGREDIENTS
Dump & Bake
1 tbsp olive oil
2 cloves garlic, minced
½ small onion, diced
1 cup long grain white rice (uncooked)
2 cups vegetable broth
1 cup salsa
1 can black beans, drained & rinsed
1 cup corn
1 bell pepper, sliced
½ tsp salt
Tofu
1 block firm tofu, pressed and cut into triangles
Taco Rub (Make One Bowl)
2 tbsp chili powder
2 tsp smoked paprika
2 tsp garlic powder
2 tsp onion powder
1 tsp dried oregano
1 tsp salt
Topping
1 cup vegan cheese
DIRECTIONS
Preheat oven to 400°F and lightly grease a 9 x 13 baking dish.
In a small bowl, mix together all taco rub ingredients. Set aside.
Add all Dump & Bake ingredients to the baking dish along with HALF of the taco rub. Stir very well so the rice is evenly distributed.
Toss tofu triangles with the remaining taco rub until evenly coated.
Lay tofu on top of the rice mixture without fully submerging it. Keeping it on top helps it hold its texture.
Cover tightly with a lid or foil. Bake for 50–55 minutes, until the rice is tender and most of the liquid is absorbed.
Remove the cover and sprinkle vegan cheese evenly over top.
Return to the oven uncovered for 5–7 more minutes, until the cheese is melted and bubbly.
Let sit for 5 minutes before scooping and serving. Enjoy!
