Tofu Rice Fajita Dump & Bake

This is a true dump-and-bake dinner - uncooked brown rice, seasoned tofu strips, peppers, and onions all bake together in one pan for the easiest cozy weeknight meal 🌶️

INGREDIENTS
For the Bake:
• 1 tbsp olive oil
• 1½ cups uncooked long-grain brown rice, rinsed
• 1 small onion, diced
• 3 garlic cloves, minced
• 1 packet fajita seasoning
• 3 cups vegetable broth
• 1 red bell pepper, sliced
• 1 green bell pepper, sliced
• 1 block extra-firm tofu, cut into strips
• 1 tbsp garlic powder
• 1 tsp onion powder
• 1 tsp paprika
• pinch of salt & pepper
For the Topping:
• 1½–2 cups shredded vegan cheese
DIRECTIONS
Preheat oven to 375°F. Lightly grease a 9×13 baking dish.
Add the brown rice, vegetable broth, and fajita seasoning packet to the dish. Stir well.
Add peppers, onion, garlic, and tofu strips on top.
Drizzle tofu with olive oil and gently toss everything together in the pan.
Cover tightly with foil and bake for 60 minutes.
Remove foil and fluff rice with a fork.
Add vegan cheese if using and bake uncovered for 10–15 minutes, until rice is tender and the top is lightly golden.
