Baked Tofu & Black Bean Tacos

These crispy Tofu and Black Bean Tacos are baked until golden, then tossed in a creamy, tangy lime sauce for the perfect balance of smoky and fresh. Serve them with a quick blended lime salsa dip for an easy, crowd-pleasing dinner that’s packed with flavour!

Baked Tofu & Black Bean Tacos

Ingredients

For the Tofu:

  • 1 blocks extra-firm tofu, shredded

  • 1 tbsp olive oil

  •  1 tbsp tomato paste

  • 1 tbsp chili powder paprika

  • 1 tsp garlic powder

  •  1 tsp onion powder

  •  1 tsp paprika

  •  pinch of salt & pepper


For the Black Beans:

  • 1 cup bell pepper, diced

  • ½ yellow onion, diced

  •  ½ cup corn

  • 1 can black beans, drained & rinsed

  • 1 tin chopped green chilies

  •  1 tbsp olive oil

  •  1 tbsp chili powder paprika

  •  1 tsp garlic powder

  •  1 tsp onion powder

  •  1 tsp paprika

  •  pinch of salt & pepper


Tangy Lime Sauce (3/4 for the filling, 1/4 for the dipping sauce):

• ½ cup vegan cream cheese

  • ½ cup vegan yogurt

  • ¼ cup water

  • Zest of ½ a lime

  • Juice of 1 lime

  • 1 tsp chili powder

  • 1 tsp garlic powder

  •  pinch of salt & pepper

    • ADD 1 cup Salsa blended with 1/4 of Tangy Lime to transform into a dipping sauce near the end.


To Assemble

• 10 small corn tortillas (or flour)

• 1 cup vegan shredded cheese (optional)

 • 1 cup shredded lettuce (optional)


Directions

  1. Preheat oven to 420°F and line 2 baking sheets.

  2. Toss shredded tofu with oil and spices. Spread onto a baking sheet #1.

  3. Toss peppers, corn, onion, and black beans with oil, and spices. Spread onto baking sheet #2.

  4. Bake both trays:

    • Tofu: 20 minutes, stirring halfway

    • Veggies: 15–20 minutes, until roasted

  5. While everything bakes, whisk together all Tangy Lime Sauce until smooth.

  6. Combine hot tofu + veggies in a large bowl. Add about ¾ of the sauce and toss to coat.

  7. Lower oven to 400°F.

  8. Brush tortillas with oil, fill with halfway with tofu mixture + cheese (optional), fold, and stack them along your casserole dish

  9. Bake for 15 minutes until crispy and golden.

  10. Blend the remaining Tangy Lime Sauce with your favourite salsa until smooth to make a dipping sauce. Add hot sauce if needed.

  11. Once done baking, stuff the tacos with lettuce and dip into your Tangy Lime & Salsa Dipping Sauce. Enjoy!
