Chili Lime White Beans

Creamy, spicy, and tangy—these Chili Lime White Beans are perfect on rice, toast, or stuffed in a wrap. All made in one pan!

Ingredients
1 tbsp olive oil
1/2 onion, minced
3 garlic cloves, diced
2 tbsp chili crisp
3 tbsp peanut butter
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp grated ginger
1 cup vegetable stock
1 can white beans, drained and rinsed
Juice of 1 lime
Directions
Heat the olive oil in a skillet over medium heat. Add the diced onion and garlic and cook for 3–4 minutes until softened and translucent.
Add the peanut butter, chili crisp, soy sauce, rice vinegar, and vegetable stock. Stir well until the sauce becomes smooth and creamy.
Add the white beans and simmer for 4–5 minutes, stirring occasionally, until the sauce thickens slightly and coats the beans.
Turn off the heat and stir in the lime juice. Taste and adjust seasoning—more lime for brightness, more soy sauce for salt.
Serve warm over rice, with crusty bread, or tucked into a wrap.
