Festive Funfetti Cookies (Vegan & Gluten-Free)

These Vegan and Gluten-Free Funfetti cookies are soft, chewy, buttery and loaded with festive sprinkles! They taste like birthday cake in cookie form and nobody will ever guess they're dairy-free, egg-free and gluten-free.

Vegan & Gluten-Free Funfetti Cookies

Ingredients

  • 1/2 cup vegan butter, room temperature

  • 3/4 cup cane sugar

  • 2 tablespoons brown sugar

  • 3 tablespoons aquafaba (liquid from a can of chickpeas)

  • 1 teaspoon vanilla extract

  • 1 3/4 cups gluten-free all-purpose flour

  • 1 tablespoon cornstarch

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 4–5 tablespoons sprinkles (vegan & gluten-free)


Directions

  1. In a large mixing bowl or stand mixer, cream together the vegan butter, cane sugar, and brown sugar for 1 minute until well combined and slightly creamy.

  2. Add the aquafaba and vanilla and beat again until smooth and glossy.

  3. Add the gluten-free flour, cornstarch, baking powder, baking soda, and salt. Mix just until a soft dough forms - do not overmix.

  4. Fold in the rainbow sprinkles using a spatula. Place extra sprinkles in a small bowl for rolling.

  5. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

  6. Chill the dough in the fridge for 10–15 minutes while the oven heats. This helps prevent spreading and keeps the centers chewy.

  7. Use a cookie scoop or tablespoon to portion about 1 ½ tablespoons of dough per cookie. Roll each dough ball in the bowl of extra sprinkles and place on the baking sheet, leaving space between cookies.

  8. Bake for 11–13 minutes or until the edges are set but the centers still look slightly soft. They will firm up as they cool.

  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to finish cooling. Enjoy!!
