Cheezy Broccoli Orzo Skillet

Craving a cozy, one-pan dinner? This Creamy Broccoli and Cheezy Orzo Skillet is the perfect blend of creamy, cheesy goodness with tender broccoli, making it a quick and satisfying meal for any night of the week!


Creamy Broccoli and Cheezey Orzo Skillet

Ingredients


  • 2 tbsp olive oil

  • 1/2 medium onion, finely chopped

  • 1/2 cup carrots, finely chopped

  • 3 cloves garlic, minced

  • 2 tsp dried thyme

  • 1 tsp paprika

  • 1 can white beans, drained

  • 3 cups broccoli florets

  • 2 cups orzo

  • 2 cups vegetable broth

  • 1 can of coconut milk

  • 1 cup shredded vegan cheeze

  • 1 lemon, juiced

  • salt and pepper to taste


Directions

  1. Heat the olive oil in a large pot over medium heat. Add the finely chopped onion and carrots, and garlic. Sauté for about 5 minutes until the onion is translucent.  

  2. Add the drained white beans and broccoli florets to the pot. Add dried thyme and paprika, continuing to sauté for another 2-3 minutes.

  3. Add in the Orzo, vegetable broth, coconut milk, and splash of lemon. Bring to a boil and let simmer for 15-18 minutes, stirring frequently to avoid sticking to the bottom of the pan.

  4. While the orzo is cooking, make the vegan parmesan by combining the cashews, nutritional yeast, garlic powder, and salt in a blender. Lightly blend until the mixture is crumbly. Set aside.

  5. Remove the pot from the heat. Stir in the shredded vegan cheeze (optional) and let it sit for 5 minutes to absorb flavour and thicken up. Season with salt & pepper to taste.

  6. Give the Orzo a final stir, then serve warm, sprinkled with the vegan parmesan. Enjoy!
