Easy Mediterranean Pasta Salad

This Easy Mediterranean Pasta Salad is fresh, colourful, and tossed in a simple homemade dressing that's packed with flavour. Made with gluten-free (if needed) pasta, fresh veggies, chickpeas, and vegan feta, it's the perfect make-ahead lunch or easy meal for busy days.

Ingredients
For the Pasta Salad:
3 cups cooked and chilled pasta, gluten-free if needed
1 English cucumber, diced
2 bell peppers (any colours), diced
1 cup cherry tomatoes, sliced in half
1 can chickpeas, drained and rinsed
200 g vegan feta, crumbled
For the Dressing:
½ cup olive oil
3 tbsp apple cider vinegar
1 tbsp Dijon mustard
2–3 cloves garlic, minced
1 tsp maple syrup
1 tsp dried oregano
1 tsp onion powder
pinch of salt & pepper
Directions
Cook the (gluten-free) pasta according to the package directions. Drain, rinse under cold water, and chill until completely cool.
Add the chilled pasta, cucumber, bell peppers, chickpeas, and vegan feta to a large mixing bowl.
In a small bowl or jar, whisk together the olive oil, apple cider vinegar, Dijon mustard, maple syrup, garlic, oregano, onion powder, salt, and pepper until well combined.
Pour the dressing over the pasta salad and toss until everything is evenly coated.
Serve immediately, or refrigerate for 30 minutes before serving to let the flavours meld. Enjoy!
