Sheet Pan Tofu Fajita

These easy Sheet Pan Tofu Fajitas are made for busy weeknights, with seasoned tofu, peppers, and onions baked together on one pan. Finish with vegan cheese, fresh lime and a creamy cashew drizzle for a cozy, low-effort dinner!

Ingredients-
For the Fajitas:
• 1 block extra-firm tofu, pressed and sliced
• 3 bell peppers, sliced
• 1 small onion, sliced
• 3 tbsp avocado oil
• 1 tbsp chili powder
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp paprika
• ½ tsp cumin
• Pinch of salt
• 1–1½ cups vegan shredded cheese
For the Cashew Cheese Sauce:
• 1 cup cashews, soaked in hot water 10 minutes, drained
• ¾ cup fresh water
• 3 tbsp nutritional yeast
• 1 tbsp lemon juice
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp salt
Extras
• Fresh lime juice
• Warm corn (gluten-free) or flour tortillas
• Cilantro, Vegan Sour Cream, Guacamole
Directions-
1. Preheat oven to 400°F.
2. Add tofu, peppers, and onion to a large sheet pan.
3. Drizzle with avocado oil and sprinkle on all seasonings. Toss to coat evenly.
4. Bake uncovered for 25 minutes, stirring halfway.
5. While fajitas bake, blend all cashew cheese ingredients until smooth and creamy.
6. Remove pan from oven, sprinkle vegan shredded cheese evenly over the top. Return to oven for 5–8 minutes, until cheese is melted.
7. Remove from oven and splash with fresh lime juice.
8. Warm tortillas, assemble tofu fajitas, drizzle on cashew cheese, serve hot, and enjoy.
