The Harvest Bowl

This hearty dish features roasted sweet potatoes, chickpeas, broccoli, and quinoa, all topped off with a creamy peanut butter sauce that will have your taste buds dancing with joy. For the Veggies:
1 medium sweet potato, peeled & cubed
1 tbsp cornstarch
2 tbsp olive oil
2 cups broccoli florets
1 can chickpeas, drained and rinsed
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp salt
1/2 apple, sliced or diced
For the Quinoa:
1 cup quinoa, rinsed
2 cups water
pinch of salt
pinch of turmeric, optional
For the Tofu:
1 block firm tofu, pressed and
1 tbsp cornstarch
1 tbsp olive oil
1 tsp garlic powder
For the Sauce:
1/4 cup peanut butter
1/4 cup warm water
2 tbsp soy sauce or tamari
2 tbsp maple syrup
1 tbsp olive oil
1 tbsp rice vinegar
2 garlic cloves, minced
1 tsp ginger, minced or powder
pinch of salt
Directions
Preheat your oven to 410°F (220°C) and prepare 2 parchment lined baking sheets.
Peel and cube the sweet potatoes and place them in a large mixing bowl. Toss them with cornstarch until evenly coated. Drizzle with olive oil and bake on baking sheet for 25-28 minutes.
Drain, rinse, and pat dry the chickpeas. Place them on half the baking sheet. Place the broccoli on the other half. Drizzle chickpeas and broccoli with olive oil, garlic powder, and paprika. Add them to the oven and bake for 15-20 minutes.
Rinse quinoa and add it to a pot with 2 cups of cold water and bring it to a boil. Once boiling, reduce heat to low, cover with a lid and let simmer 12 minutes until the liquid is absorbed.
In a small bowl or a blender, mix together peanut butter, soy sauce, maple syrup, olive oil, rice vinegar, garlic, and ginger until well combined. Gradually add warm water to the mixture until you reach your desired sauce consistency.
Thinly slice or chop a fresh apple.
Assemble the Harvest Bowl by placing sweet potatoes, broccoli, chickpeas over a bed of cooked quinoa. Add the fresh apple. Drizzle the creamy peanut sauce over the veggies and quinoa.
Garnish with spring onions and sesame seeds if desired. Enjoy
