Vegan Chocolate Chip Cookies (Crumbl Dupe)

Introducing Vegan Chocolate Chip Cookies 🍪🤩 These plant-based delights are soft and chewy and oh so delicious. Now everyone can indulge and see what makes these cookies IRRESISTIBLE!

Ingredients:

  • 1 cup (2 sticks) vegan butter, softened

  • 1/2 cup granulated sugar

  • 1 cup light brown sugar, packed

  • 2 tablespoons chia seeds

  • 6 tablespoons water

  • 3 tablespoons soy milk

  • 1 tablespoon vanilla extract

  • 3 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • pinch of cinnamon

  • 2 cups vegan milk chocolate chips (or semi-sweet if preferred)


Instructions:

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.

  2. In a small bowl, mix together the chia seeds and water to make a chia egg. Let it sit for about 5 minutes until it thickens.

  3. In a large mixing bowl, cream together the softened vegan butter, granulated sugar, and light brown sugar until light and fluffy.

  4. Beat in the chia egg, soy milk, and vanilla extract until well combined.

  5. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon and salt.

  6. Gradually add the dry ingredients to the wet mixture.

  7. Gently fold in the vegan milk chocolate chips until evenly distributed throughout the dough.

  8. Portion out the dough into balls (about 2 tbsp of dough per cookie).

  9. Place the prepared cookies onto the lined baking sheets, spacing them about 2 inches apart.

  10. Bake in the preheated oven for 9-11 minutes, or until the edges are lightly golden and the centres are set but still soft.

  11. Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.  Enjoy!
