Vegan One-Pot Fried Rice Extravaganza!

Ingredients


For the Tofu:

  • 1 block firm/extra firm tofu, cubed

  • 1 tbsp cornstarch

  • 1 tsp garlic powder

  • pinch of salt


For the Fried Rice:

  • 1 tbsp olive oil

  • 1/4 onion, diced

  • 3 garlic cloves, minced

  • 1 tbsp ginger, grated or powder

  • 1/2 cup celery, diced

  • 1/2 cup carrots, diced

  • 1/2 cup edamame or peas, shelled

  • 1 bell pepper, chopped

  • 1 cup rice, rinsed

  • 1 1/2 cup water

  • 5 tbsp soy sauce

  • 2 tbsp rice vinegar

  • 2 tbsp maple syrup


Recipe

  1. Start with preparing the tofu. In a bowl, toss the cubed tofu with cornstarch, garlic powder, and a pinch of salt until evenly coated. Place the tofu on a baking sheet lined with parchment paper if baking, or in the air fryer basket if using an air fryer. Bake at 415°F for 15-20 minutes in the oven, or air fry at 400°F for 10-12 minutes, until golden.

  2. Meanwhile, in your favourite pot or pan with a good lid, heat the olive oil over medium heat. Add diced onion, minced garlic, and grated ginger. Sauté for about 2 minutes until fragrant and the onions are translucent.

  3. Add diced celery, carrots, edamame or peas, and chopped bell pepper to the pot. Stir well to combine with the onion, garlic, and ginger mixture.

  4. Add rinsed rice to the pot and stir to combine with the vegetables.

  5. Pour in water, soy sauce, rice vinegar, and maple syrup. Stir well to combine all the ingredients.

  6. Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed.

  7. Once the rice is cooked, remove the pot from heat. Fluff the rice with a fork and gently fold in the baked or air-fried tofu cubes.

  8. Serve hot and enjoy your Vegan One-Pot Fried Rice!
