Cozy Sweet Potato Lentil Soup

Step into comfort with a warm bowl of Cozy Sweet Potato Lentil Soup—this vibrant blend of earthy sweetness is the perfect cozy companion for chilly days. Packed with wholesome ingredients, this soup is a celebration of simplicity and plant power.

Ingredients
2 tbsp neutral/olive oil
1/2 an onion, diced
2-3 garlic cloves, minced
2 carrots, sliced
2 medium sweet potatoes, diced
1 tbsp cumin
1 tbsp turmeric
1 tsp coriander
1/2 tsp cayenne (optional)
5 cups veggie broth
1 cup red lentils, rinsed
1 tsp brown/coconut sugar
pinch of salt & pepper
splash of lemon juice
Directions
Heat the oil in a large pot over medium heat. Add the diced onion, minced garlic, and sliced carrots. Sauté for about 4-5 minutes, until the onion is translucent and the garlic is fragrant.
Add the diced sweet potatoes to the pot. Sprinkle in the cumin, turmeric, coriander, and cayenne pepper if using. Stir everything well to coat the vegetables in the spices. Let them cook for about 3-4 minutes, stirring occasionally.
Pour in the vegetable broth and add the rinsed red lentils. Bring the mixture to a boil, then reduce the heat to low. Let it simmer for 20-25 minutes, or until the lentils and sweet potatoes are tender.
Add the brown sugar and a pinch of salt and pepper to taste. Stir in a splash of lemon juice to brighten up the flavours.
For a rustic texture, serve the soup as is with the chunky vegetables. If you prefer a smoother consistency, use an immersion blender to puree the soup to your desired texture.
Serve the soup hot, garnished with fresh herbs or pumpkin seeds, if desired. Enjoy!
